Want me to throw some smoke onto some smoked sausage to go along with that brisket? What about pickles, onions and cheap white bread? It IS Texas, after all.

Sure. I cant imagine brisket without those items.
I do not plan on bringing any BBQ sauce. I dont use it or eat BBQ with sauce, I know it’s weird.

That just means you’re cooking the meat right. You wouldn’t need sauce unless you had messed up the meat and wanted to mask it :wink:

That’s a very Texas-centric statement.

Not saying it’s wrong (Texan myself), but folks in KC and Memphis may beg to differ (hint…pig country)

The catch is, Texas considers Beef Brisket to be BBQ and not much of anything else as a purist. If done right brisket needs no more than salt, pepper, and smoke. Other states pride themselves on pork, chicken and turkey all cooked to the point that they fall apart and often times turn into stringy hard to eat flossings. For these item, Sugar, ketchup and spices are needed.

It’s an opinion, and I do reside in Texas. As does most of the makerspace. As well as most of the attendees of this event, and the cook. You could say that the Dallas Makerspace is Texas-centric in it’s existence :slight_smile:

I’m aware that other types of BBQ exist, I just don’t have the taste for them.

I learned a long time ago to appreciate most of the other regions versions of barbecue, but I have to admit, that those other regions don’t know what they’re doing when it comes to brisket.

They try. It’s cute. It’s also quite wrong. One area where I will defer is Kansas City and Burnt Ends. I bet @pinewoodnut knows what I’m talkin’ about.

Insurance always cancels the fun stuff…

It’s rarely the insurance company … it is the unwillingness to pay a higher premium , we are the Dallas Makerspace … we want bouncy houses … haha

I did just get a couple more probes & a spare temp sensor to watch the meat today. Ive had some fail in the past that’s why I now have redundancy.

I agree, and I simply stated mine. No need to tell me my opinion isn’t needed or wanted.

I am a fan of the Weber iGrill and their iPhone app.

Use it myself.
