Depending on when, it would be cool to smoke a home cured corned beef into some pastrami. @Nick and I made a wicked good batch of each. Too bad we did not make enough!
We need about 7 days to cure the corned beef. Otherwise some briskets or pork loins would be great. Let me know I have an account with Restaurant Depot if you want whole boxed meat. Need a whole goat or pig?
After friends-giving @uglyknees was planning to do another event in December. @engpin is this part of that event or taking place of that event? Also, @AlexRhodes is planning an event on talk on the 10th.
Are we planning to be separate of these events, or do we try to combine?

That was what I was asking, If it is far enough away Ken and I might be able to teach a class on how to trim and brine a brisket and possibly serve it at the cook out???
I’ve actually been debating the purchase and donation to the Space of one of the small entry level Brinkmann smoker/grill combos if it would be accepted.
In any case, if we set up a smoker I’d love to be able to throw in a pork or beef belly and make some smoke some bacon…

My friend has one. It works quite well for the price point, is easily modified/upgraded,
and is small enough that it is easy to move and won’t take up a lot of storage space.
I might be able to talk Blake into bringing his up, but smoking is a time consuming endeavor.

May look at making a Weber smoker. You can make one pretty cheap. Then create a temperature controller to control the smoker temp.
