Cranberry-orange muffins on one of coffeebean’s plates made in ceramics.
Ingredients:
8 TBS butter (stick)
1 3/4 Cup flour
1 Cup sugar
1 large egg
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice or nutmeg
Zest from one orange
Juice from 1/2 orange
1/2 Cup chopped black walnut (we collected in Arkansas last fall and froze)
3/4 Cup dried cranberries
1/4 to 1/3 Cup buttermilk (amount depends on amount of orange juice, start with 1/4 and adjust - don’t want the batter to be too runny)
Crumble Topping:
1/4 cup flour
1/4 cup sugar
4 TBS butter cut in to make course crumbles
Easy mode is boiling them or worse, in the microwave.
