Have you thought about a 2x10 LCD? It would probably be more visible than a regular style lcd screen & probably take less power to run.

Should not be a problem.
All low voltage parts and no open arcing contacts.
Also donā€™t think the environment will have explosive gases/fumes.

This one might be a cool display. 2x10 doesnā€™t give much room for displaying multiple levels.

This display might be neat as well,
