Knife sharpening class 2026

Do you offer a knife sharpening class? I see some posts from 2018 but nothing recent. I’d like to learn to properly sharpen my kitchen knives using whetstones.

Youtube is your friend here, but you can get an angle guide on Amazon (I believe the rule of thumb is 3 pennies stacked on top of each other) and then get a king 1000/6000 grit whetstone. If you have chips in your blade, you’ll need a coarses whetstone to repair that damage. With three fingers on the blade, you’ll work each section of the knife (with a curve on the last one and two fingers) pushing as normal, and applying pressure on the pull. You’ll probably need at least 60 passes or so on the 1000 grit if it’s been a while since you’ve sharpened your knifes, and you can go on the 6000 grit until your knife can slice a tomato paper thin or cleanly cut through a piece of paper.

Kenji does his slightly differently, but here is a good reference video you can use:

You can also 3D print a set of different angle guides quickly.

I printed these a week or two back and they work great.
