What’s the refund process like when you cancel your RSVP?
The message tells me “the refund will be made if applicable”
Will I see it in my credit card statement? or under certain conditions?

I would expect to see it in your statement, although it may take up to a week to show up. Back when I called in credit cards on my phone (punchity-punchity-punch-punch) and I made a mistake, an instant correction on my part took about a week to show up on the customer’s account.
The CC companies are really speedy about taking it out of your account, and really slow about putting it back.
As long as you aren’t canceling after a cancellation windows, you should receive a full refund on your card.
You’ll have to talk to the person that scheduled the class to see if a cancellation window in effect.

Assuming you were logged into the calendar when you registered, you can go into Your Account / Attending Events (upper RH corner). Find the class/event you had signed up for. Click on “More Info and RSVP”. The page for the class, even historical ones, will show what the cancellation deadline was (example below).
If no cancellation deadline was set by the instructor, then the default deadline is the beginning of the class/event.
