Made some spinach and cheese enchiladas with a homemade Verde sauce.
Enchiladas:
Oaxaca cheese
Spinach
Tortillas
Verde sauce:
10 roasted tomatillos
2 roasted jalapenos
1 small roasted onion
4 cloves of garlic
Salt and pepper to taste
Blend it all to a liquid

Impossible burger
Mushrooms
Queso fresco
Pickled onions
Tomatillo salsa
Tomatoes
Teriyaki pork tenderloin and roasted veggies. A side salad (not shown) rounded out the meal.
Easy Italian Pot Roast
1 pot roast (3 lbs+/-)
1 jar spaghetti sauce
1/2 white onion, sliced
16 oz button or baby Bella mushrooms, sliced
Put first three ingredients (in order given) into crock pot and cook on low for 8 hours.
1 hour before serving, pour sliced mushrooms in and continue cooking.
Optional: serve over prepared egg noodles or other pasta.
Delicious, moist, flavorful, and fork tender.
