I signed up for the July 15 Laser Basics class but canceled the RSVP on accident. Is there a way to undo this?

To the best of my knowledge actions like this with the calendar system are final. I would suggest trying to sign up again for your now open seat. I really hope it hasn’t been taken.

Indeed. I learned the hard way not to use my iPad for sign ups. Something about the way the page displays meant I did that more than once.
The system will not allow a new registration for the same slot.
The problem with maybe attending anyway is getting your name added to the users list afterwards. I recall instructors having little control over being able to add names.
