What grease would you use in the bellows on the steering rack? Lithium based or moly based? Any reason for one over the other?

I think when I’ve done a rack rebuild or de-power we’ve just used standard wheel bearing grease. But you’d want to use the same (or similar) to what Toyota used new to avoid incompatabiilty.
Most racks use a general purpose grease.
The rack itself gets the grease - the rack boots do not get “filled” with grease. The boots just keep dust, dirt, moisture, contaminants, etc out - but they are never filled with grease (same applies to axle boots).
