Saw the Fusion without the metal grate on it. Is it okay to operate it like this?

Look underneath the fusion, it should be there

That’s the engraving surface, whereas the grate is for cutting.

It’s metal. Laser doesn’t cut metal. Safe to use.
Laser bounces off metal. Will impact the backside of your material (always acrylic in your case 
)
The honey comb helps because there is less metal for the laser to bounce off of.
A nice feature is this pictured bed is the pin holes. Useful for jigs
