Edit: While amazing it is not worth waiting in line from 4am till 11am for Franklin’s.

For good quality BBQ and an amazing view of hill country head to County Line on the Hill.
Could also go to The Salt Lick in Dripping Springs

Obviously people have differing opinions on bbq in Texas but here’s my list:
Amazing Tier (As good or better than Cattleack in Carrollton): Franklin, Louie Mueller (~30m outside Austin), Snow’s (~1 hr outside Austin), I haven’t been to Snow’s but it bumped Franklin for the Texas Monthly #1 spot so it’s gotta be good. Louie Mueller is a good Franklin alternative if you want a slightly less crazy line, it’s the same style and has been around since the 50s.
Still damn good tier (As good or better than Pecan Lodge): Micklethwaits (amazing beef rib), Black’s, La Barbecue…
I don’t get it tier: Rudy’s, my Bostonian co-workers loved that place but if you’re from Texas I’d go elsewhere.
I guess I could sent a picture of the beef short ribs I have in my Sous Vide at the moment to be smoked on Sunday.
Stop in Waco first, DeMaria’s BBQ is 100 miles closer, and about 50x better.
Speaking of Waco. Fazoli’s (fast food Italian)is good as well as Vitek Gut Pack. It’s been years since I’ve had the Gut Pack but I remember it being good.
There used to be a Fazoli’s off MacArthur and 635 where the Taco Bueno is. Their Breadsticks rival Olive Garden’s
Just had Terry Black’s yesterday, it was pretty good. I can’t compare it to Franklin because I’ve never had the time to wait in that line. Skip the cream corn and mac and cheese, but the Banana pudding and all the meats were as good or better than anything I’ve had in Dallas.
They open the line at 11am and run out by 1:30-2. I think they said they cooked 130 briskets per day.
On your way to Austin, pull off off I-35 about 30 minutes early and drive 10 miles East to Taylor, Texas.
